No es muy estable por lo que deberemos mantener durante el servicio dentro del deshidratador para poder servirlo crujiente.

water condensation. With this in mind, has been designed a self-cleaning oil system in order to prevent the oil emulsifying with the steam given off from each packing process. Thanks to this system the oil can be used for a longer time with a consequent substantial saving in cost. In addition, the working life of the vacuum pump is extended as dirty oil performs less efciently and the motor has to work harder. The oil cleaning operation should be performed once a week for both sensor and time operated packers.

La mejor plancha del mundo!
La nula porosidad de la sal permite que el toda la supercie transmita calor de forma uniforme la sal de cristal tiene una energa especca muy alta por lo que tiende a mantener cualquier temperatura durante mucho tiempo. Las placas de sal pueden ser calentadas o refrigeradas de manera segura llegando a cualquier extremo. Hemos probado de -196C hasta el fuego directo. Su bloque grueso de sal mantendr la temperatura durante 20 / 30 minutos.
Su antiadherencia, superior a la del teon, la cermica u otros recubrimientos antiadherentes, permite cocinar productos altamente delicados.
De hecho, adems de ser utilizada como plancha hay otras formas de uso, ya que hay alimentos, estilos, y nuevas tcnicas de cocina con las que sacarle partido.
Hay que destacar el increble comportamiento trmico cuando ha sido sumergida en LN2. o sin llegar a este extremo, como base fra para el servicio de platos fros o helados si esta es guardada en un congelador.
The best plate in the world!
The plate allows temperatures which go from a 196 C to a very high +350C.Its molecular structure gives to the salt plates a single property by propagating the heat as well as the old fashion cast iron skillets. The salts structure is a crystalline lattice.
Another property which is especially interesting is that these plates are non-stick in a grade superior to Teon, ceramics or even silicone.
For cooking on a salt plate you must place the plate over a gas ame or charcoal.
